The Final Countdown

Wow wow wow. Do you ever think "Oh, my life is so boring" and then life answers by sending you a personal Tasmanian-devil that whirlwinds through your life and leaves you with whiplash? That's kinda how I feel right now. March has been a filled with friends and family, midterms, trips, and a little snapshot of what life will be like after school ends. It's hard to believe that in just one month, I will be done with school for (hopefully) ever. Time is flying by and while I love it, at the same time I feel like it makes it harder to savor the little moments. Moments where my cousin is next to me and I feel like I'm 10 again or when my girlfriends make me laugh so hard I feel like my abs could burst or when sitting in the library for hours feels like minutes (just kidding, it still feels like hours but I can't believe it will soon be over). Here's a few snapshots of those little moments:

Soba Noodle Slaw with Peanut-Sesame sauce

This weekend was filled with a lot of bad eating. As a result, we were on the search for something veggie packed yet flavorful. This recipe via Cookie and Kate was just what we needed. I took a few short cuts with the recipe which made it super easy and quick to whip up. Whether you stick to the original or make it your own, you won't be sorry.





Slaw Ingredients:

  • 4 oz. soba noodles (I found them at Whole foods)
  • 1 small purple or green cabbage (I got a pre-shredded bag from Trader Joe's)
  • 4 carrots, peeled (again, I got a pre-shredded bag from TJ's)
  • 1 bunch green onions, sliced into thin rounds
  • 1 chicken breast, cooked however you like & chopped up
  • * Optional: Cilantro, chopped peanuts, lime wedges for garnish
Peanut-Sesame Sauce Ingredients:
  • 1/2 cup peanut butter
  • 3 tbsp. toasted sesame oil
  • 3 tbsp. soy sauce
  • 2 tbsp. agave nectar or honey
  • 1 tbsp. fresh ginger
  • 2 garlic cloves
Steps:
  • Cook noodles according to package directions. Run under cold water after.
  • Prepare vegetables if you didn't buy them pre-shredded, a food processor will help you out here.
  • For the sauce, toss everything in a Nutribullet or mince garlic and ginger and whisk with the rest.
  • In a large bowl, combine noodles and veggies with the sauce. Cover and let sit in the fridge for about 20 minutes.
  • Add chicken and garnish right before serving.

Weekend Recap ... 

This past weekend I went up to Vermont with Col for a relaxing time with friends. The past couple of weeks have been crazy busy and not having anything to do was amazing. So amazing that I didn't even do the thing I love doing the most - take pictures! Instead, I will recap the fun but speedy trip I took to NYC last weekend. My best, Laura, gets to travel for work. Whenever possible we turn these work trips into friend time since living on opposite coasts doesn't allow for as much face time as we'd like. It was a quick trip but fun nonetheless!
